Serves 4 as a starter or for lunch
Takes 10 minutes
1 garlic clove
2 tbsp extra-virgin olive oil
75g sourdough ciabatta, sliced into pieces
5 tbsp live plain yogurt
2 tbsp finely grated Parmesan or vegetarian hard cheese
1-2 tbsp milk
1 head of chicory, leaves separated
1 baby Gem lettuce, leaves separated ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Halve the garlic clove and crush.
Mix one half into 1 tbsp of olive oil.
Toss the bread with the garlicky oil, then spread out on a shallow baking tray.
Cook in a preheated 200C (180C fan) oven for 7-10 minutes, turning once until golden and crisp.
Leave to cool. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Stir together the remaining crushed garlic with the leftover 1 tbsp oil, yogurt, and cheese.
Use the blade of a knife to mash the anchovy (or chop very finely) and stir through.
Add enough milk to make a loose sauce which drops easily off a spoon. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Arrange the salad leaves on a plate.
Scatter over the sourdough croutons and then dollop over the dressing before serving!
