Overnight oats are our all-time favourite brekkie as they’re high-fibre and there are so many different combinations you can try! By making a batch for the week ahead, you’re guaranteed a nutritious, gut-friendly breakfast with minimal effort.
Overnight oats are fermented by the process of lacto-fermentation using beneficial bacteria found in live yogurt or kefir (lactobacillus).
ingredients
40g oats
150ml kefir/yogurt or milk (dairy, plant, nut or other milk)
1 grated apple
1-2 tsp almond butter or
1 tsp ground cardamom/cinnamon
equipment
(included in our All in One Fermentation Kit)
500ml jar
screw top lid
method
- Place all the ingredients into the 500ml jar, stir well, cover with the screw lid and place in the fridge for a minimum of 2 hours or ideally, overnight.
- When ready and the oats have hydrated and thickened the mixture, pour the contents of the jar out into your bowl. Add the toppings of your choice just before serving.
storage
Overnight oats can be stored in the fridge for up to 4 days.
