sauerkraut no-bake brownies
These brownies are not only veggie, vegan, gluten free and dairy free but they also contain sauerkraut – music to your microbes’ ears. Sounds a little weird, we agree, but don’t knock ‘em till you try them, they’re AMAZING.
The no-bake recipe makes them mega simple and the sauerkraut gives them just the right amount of tang!

400g pitted medjool dates
80g ground almonds
80g mixed seeds
60g sauerkraut, finely chopped
handful of walnuts
3 tbsp cacao powder
1/2 tsp sea salt

method
- Using a chopping board, finely chop the sauerkraut.
- Add the dates, ground almonds, cacao powder and salt to a food processor. Process until the mixture is sticking together. Mix in the sauerkraut.
- Line a loaf pan with baking paper. Transfer the brownie mix and press firmly into the dish with your hands until evenly distributed. Once the mix is evenly distributed, press pieces of walnuts into the top of the brownies.
- Place in the fridge to allow the brownies to set for around 20-30 minutes. Remove from the fridge and cut into 8-10 squares.
