Can you think of a more refreshingly random combo than strawberry and lemongrass? Loaded with microbes, this flavoured water kefir makes the perfect mocktail (and no hangover – win win!).

ingredients

800ml water kefir from first fermentation (see recipe)
50g crushed strawberries
1 lemongrass stick, finely sliced

method

  1. Add the strawberries and lemongrass to a 1L clip top bottle. Using a funnel, pour in the first fermentation water kefir, leaving 1 to 2 inches free at the top.
  2. Store at room temperature, out of direct sunlight for up to days, until it reaches desired level of carbonation.
  3. Chill in the fridge before serving.

 

storage

Store in the fridge, tightly sealed, for up to two weeks. Once opened, best consumed within 3 days.
