Strawberry and Lemongrass water kefir
Can you think of a more refreshingly random combo than strawberry and lemongrass? Loaded with microbes, this flavoured water kefir makes the perfect mocktail (and no hangover – win win!).

800ml water kefir from first fermentation (see recipe)
50g crushed strawberries
1 lemongrass stick, finely sliced

fibre – 0.7g
fat – 6g, and of which saturates 4g
carbohydrates – 15g, and of which sugars 14g
protein – 5.6g
- Add the strawberries and lemongrass to a 1L clip top bottle. Using a funnel, pour in the first fermentation water kefir, leaving 1 to 2 inches free at the top.
- Store at room temperature, out of direct sunlight for up to days, until it reaches desired level of carbonation.
- Chill in the fridge before serving.
Store in the fridge, tightly sealed, for up to two weeks. Once opened, best consumed within 3 days.
